As a busy mom I am all about things that make my life easier. The time of day I really appreciate saving time the most is at dinner time because usually we are squeezing in a meal before or after a ball game or have just a bit of time in between activities on our busiest nights. When we are home, meal kits are one of the simplest ways to get delicious dinners on the table quickly.

I recently discovered that Peapod, our favorite grocery delivery service, offers a variety of meal kits that let me avoid the grocery store since they’ll deliver them right to my door. It’s such a time saver! Shopping with Peapod is easy, too. You can sort by category, or use one of the many filters, including nutrition and dietary filters, to sort the items as you shop.

Peapod collaborates with renowned food taste-makers to craft delicious meal kits that are convenient and easy to cook. I bought several of these meal kits when I placed an order with Peapod and loved how all of the ingredients were delivered in a bag and each one was chopped and measured so there was less work to do. It’s also nice to be able to try different flavors and cuisines without having to buy a ton of spices and ingredients (just ask my husband how often I tend to buy something for a recipe and then never use it again! lol).

Peapod created a meal kit based off of one of Mark Bittman’s favorite recipes in his cookbook Dinner for Everyone: 100 Iconic Dishes Made Three Ways. In his cookbook, Bittman offers classic dinnertime dishes spun in three unique ways – easy, vegan, and all-out for entertaining. I think this cookbook is perfect for both novice chefs like myself and more seasoned ones like my husband.

easy pho

Fast Pho is Bittman’s “easy” recipe for pho that uses shortcuts and ingredients to shorten the traditionally lengthy process into one that gets dinner on the table in half an hour. Since Pho is a meal that I had never had before I didn’t realize this wasn’t an “authentic” pho recipe but I appreciated how simple it was to make. My husband, who has had pho before, was aware that this wasn’t a traditional pho recipe but enjoyed it just the same and was happy not to have to have it simmering on the stove for hours.
