Raise your hand if you’ve been sick already this year ✋ I’ve been sick a handful of times myself and winter isn’t even halfway over yet! As a mom, being sick is the worst because we don’t really get sick days between caring for our kids, working, running errands and taking care of our homes. Today I wanted to share some sick day essentials as well as a family recipe for baked macaroni and cheese that is absolutely fabulous (especially if you love cheese as much as I do).

OTC Medicines

Baked macaroni and cheese

Another thing I must have when I’m sick? Easy meals that don’t take much prep! Though soup is my typical go-to meal when I’m sick, because I always feel better after a bowl of it, there is just something about making a recipe that reminds me of my childhood that cheers me up and brightens up my day when I’m not feeling well. One of my favorite family recipes is baked macaroni and cheese made with cheese curds and stewed tomatoes. It’s a recipe my grandma made when I was younger and that my mom still makes. I follow the recipe they use but we’ve changed it up a bit with the addition of ricotta cheese to go along with the cheese curds. This macaroni and cheese is the cheesiest mac and cheese you’ll ever eat!

Ingredients:

  • 2 1/2 Cups Of Elbow Macaroni
  • 18 oz. White Cheese Curds
  • 14 oz. Can of Stewed Tomatoes
  • 4 oz. Ricotta Cheese
  • Salt & Pepper (to taste)

Directions:

Cook elbow macaroni according to the box’s instructions and then let cool. In a large greased casserole dish combine all ingredients and bake (uncovered) at 350 degrees for 40-45 minutes.

And when it comes out of the oven…. so much gooey cheese!

  3. It seems like our local area just can’t shake the bugs and flus going around! One of my “sick day essentials” is my favorite blanket. It’s soft, warm, and even as old as I am, gives me a little secure feeling. Your macaroni and cheese sounds delicious! Can’t go wrong with cheese!!

  4. Those are some great essentials. I hate when our household gets sick. Mac and cheese is great for when you’re sick though. A great comfort food, and this recipe sounds amazing.
