Menu Plan {January 2nd-8th}

This week is a special one food-wise for me because today I am starting a healthy eating challenge with Special K and also the Boost Your Budget challenge. Here are my healthy meals for the week using many ingredients we already have:

Monday- Grilled Chicken Salad

{For this recipe I need to buy the mixed greens and vegetables.}

Tuesday: Tuna and Pasta Salad

{I have the pasta and tuna for this recipe so I just need to buy the vegetables.}

Wednesday- Spaghetti With Sauteed Chicken And Grape Tomatoes

{All I need to buy for this pasta are the grape tomatoes.}

Thursday- Greek Shrimp

{I have shrimp in the freezer and will use leftover tomatoes from earlier in the week so I just need feta cheese for this recipe.}

Friday- Leftovers

Saturday- Pork Carnitas

{All I need to buy for this recipe is an avocado, tomato, jalapeno, and cilantro.}

I think I did pretty good with finding healthy meals and using food I already have. Seems that most of what I need to buy is fresh vegetables. What is on your menu plan for the week?
